The handheld steel consists of two butchers steels the same hardness, temper and cut as a professional steel. It is preset to the optimum angle and spring load to prevent damaging knifes.

To use, just hold the sharpener point down on a choppping board and insert the knife through the slot in the handle. Draw the knife back and forth over the crossed steels several times or until the blade is sufficiently sharp.
